I just wonder how its possible to do those weights and still keep within the rules and weigh fish over 8lb and stick to the net limits.

You dont have to catch that sort of weight
If you fish on the deck and feed sensibly you can catch 100lb and have an enjoyable days fishing
while all the fools around you kill themselves trying to haul 1000lb off the surface
